August is coming to an end, which means school is starting soon!

Prepping lunch for students both young and old can be difficult in the busy fall season. Every student is different, and often their nutritional needs vary, too. The classic PBJ may work for some, but not all.

So if you’re struggling to find a lunch that interests a gluten free 8th grader, a 4th grade vegetarian or athletic college senior, you’re in luck! There’s something good for everyone.

1. Chicken Soup


For picky eaters, try a a classic chicken soup! You can make it ahead and store it in the freezer in batches to thaw the night before.

But unfortunately so is the heat and humidity.

If you’re too hot to cook, try one of these seasonally inspired smoothies for a cool treat that’s also good for your health! Below are a few recipes, but feel free to alter anything to your liking.

Sweet frozen grapes are an ideal complement to berries. Mix them together, and you’re in for an antioxidant-rich treat. Perfect Weekend Pancakes

perfect weekend pancakes

This easy, whole grain pancake recipe is perfect after sleeping in on the weekends, or even just making in the morning because you have an extra 20 minutes.

You don’t need a reason to make these, especially since all the ingredients are wholesome, and already in your pantry!

So what are you waiting for?
Pancakes for dinner!

Serves 2

Ingredients:

  • 1 cup whole wheat flour
  • 1 tbsp baking powder
  • 1/2 tsp sea salt
  • 1 cup unsweetened almond milk (substitute water or other plant-based milk of choice)
  • 2 tbsp pure maple syrup (or sweetener of choice)
  • 1/2 tsp cinnamon
  • 1 tsp pure vanilla extract
Steps:
  1. Mix together the flour, baking powder, sea salt and cinnamon in a bowl.
  2. Add the unsweetened almond milk, vanilla and maple syrup and stir until “just mixed.”
  3. Let the batter sit for 5-10 minutes. (Optional, but I found they come out fluffier this way.) Let the pan heat up while you wait.
  4. Cook in 1/4-1/2 cup portions in a lightly oiled non-stick pan over medium-high heat.
  5. Once there are a few bubbles in the middle, flip and cook for a few more minutes on the other side.
  6. Serve and enjoy!

I topped mine with banana slices, peanut butter drizzle, and maple syrup. I also added chocolate chips because plain pancakes are never as good as chocolate chip! Here’s a pic of my own construction, but feel free to experiment!

Zipping From a Company Car to Other Means of Transportation

Like many businesses we were psyched to get commercial plates so that we could park in loading zones and avoid the musical chairs of city parking meters. That excitement turned when in a state inspection our car was deemed to have several thousand dollars worth of repairs. Sitting at the car dealership I came to the conclusion that this was the time to switch to Zipcar. I figured this decision was sound, it fit our triple bottom line paradigm; it was good for the environment as we could reduce our carbon footprint by utilizing public transportation and hauling supplies to and from each location by hand, it was good for the community as businesses like Zipcar with car sharing models deserve to be encouraged to expand by our spending vote, and it was good for VIM as it gave us more exercise and is significantly less expensive. It turns out that the unforeseen benefit is that Zipcar is really easy to use and we were able to set up a company account that allows employees to zip for less. I know I sound like a cheerleader and you’re thinking “did Zipcar pay them to say that?” We’re just so happy with the decision we want to encourage other businesses to do the same.

Since getting into bachata and salsa in the summer of 2025, he has become immersed in the world of Latin dance and performs with the Rumba y Timbal dance company, Tumbao, based in Cambridge. Besides working as a professor in the arts, he loves weightlifting and keeping active, with dance remaining fundamental to his approach to a healthy balance in life. As a bachata instructor, he emphasizes that movement is an exploration and appreciation for what our bodies can do and achieve — just like in fitness overall — especially in a social setting to connect with music and others in community.

Are you curious about poses like headstand, forearm stand, and handstand? In this 90 minute workshop we will break down the different aspects of these heat building inversions. We will start with a 50 minute flow, focusing on strengthening the core and shoulders, and lengthening the hamstrings. Then, we will spend time exploring each inversion and focusing on specific drills to encourage an inversion practice. We will also discuss some of the mental benefits that inversions can offer us in our yoga practice. 

This class is designed for intermediate to advanced students who have an established, consistent yoga practice. The goal is not to “get up” into an inversion, but to work the aspects of the shape and encourage exploration.
